Keeping up with the Fall theme, my next obsession is with apples. Thinking about what to make with them, I came across a recipe for an Applelicious Sheet Cake in my Better Homes and Gardens magazine this month. It looked so yummy! Since moving to the northwest (from the southwest), I’ve experienced fall in a whole new way. The leaves actually change colors here…it’s not a myth, it’s real and its gorgeous! Not only that, there are these things at the grocery store… so cute and fun…pumpkins! All kinds of pumpkins! Big, small, lumpy, round, squat, fat, oblong, white, yellow, orange, spotted pumpkins! I had never seen so many different kinds! I know, sounding pretty sheltered right now huh? Either way, I always want to buy them in bulk and bring them home to go pinterest decorating crazy on my entire house! But recently I was thinking that they deserved a better purpose. What else can I do with these tasty and adorable little treats? I saw a recipe for stuffed pumpkins; what an awesome idea! But what do I want to stuff my mini pumpkins with? Well, I couldn’t help it…cupcakes are just on my brain lately. So there you have it, I decided to bake a cupcake inside an actual mini pumpkin. I wanted to see what happens, if it would even work, and to see how insanely cute they would turn out! I was not disappointed!
Originally, I was thinking about starting a blog all about cupcakes and eventually adding more topics or a whole new blog. Eventually, with the help of my other half, I came to the decision to not limit myself from the start with some sort of specific cupcake theme. However, when I was planning my first couple of posts, I just kept going back to cupcakes! And why not? They’re delicious little things and they’re what inspired me to start blogging at all, along with the help of my friend Glory (you can check out her YouTube channel here). Anyways, the first recipe I wanted to do was a raspberry and vanilla swirled cupcake. When I thought about what kind of frosting I would use, I settled on champagne. It was perfect, raspberries and champagne go so well together and this whole deal is a cause for celebration! I mean, it’s the beginning of my first blog! I feel like we’ve all been there, that tugging and gnawing feeling of being lost and confused and just plain insignificant. It can feel like the light inside you is burning out. I know this feeling all too well and I’ve decided that it’s finally time to knock it off.
Last Sunday, the priest at my church was delivering his sermon in his usual engaging manner. I’m new to the church scene and on a journey of some sort to find out what I believe in. It’s been an emotional ride so far. When he started to speak about individuals feeling like they are insignificant and assuring all of us that we are in fact…quite the opposite, I found myself wiping the tears from my face. I tried to tell myself I didn’t know why, that I don’t feel insignificant and should really pull it together. I tried to breathe and say “Stop it. You know that you have purpose, you are appreciated, and you make a difference”, all the amazing things my parents always told me and what I want to desperately believe in and to live up to.
