Keeping up with the Fall theme, my next obsession is with apples. Thinking about what to make with them, I came across a recipe for an Applelicious Sheet Cake in my Better Homes and Gardens magazine this month. It looked so yummy! Thin sliced apples on top gave it nice contrast, appealing to my eye and the thin coating of icing on the browned cake was appealing to my taste buds! Decision made!
I tweaked the recipe a little bit, mostly because I couldn’t find some of the original ingredients and because some of the ones I had on hand had gone bad! Yikes! Dried cranberries became my substitute for dried apples, all the ones at the grocery store looked really just…strange. They had weird ingredients on the label too.
I chopped up the craisins so that they wouldn’t be too overwhelming in the cake, just a subtle hint of cranberry. The original maple icing became a cinnamon icing. The cake worked out so nicely, I could barely believe it! Moist and delicious, the perfect amount of tart and sweet!
It’s been a lot of fun playing with recipes, something I was always a little too hesitant to do before. If I didn’t have the right ingredients or couldn’t find them, I simply wouldn’t make whatever the recipe was. This has been an awesome reminder to go with flow, be adaptable, be creative, and be adventurous! Granted, swapping cranberries for apples is no great adventure, but I think it represents something bigger. Life is what we make it, so when you’re missing something important, think about what you can do to change that. The solution might be different than you think!
